Promoted to GM after 12-month induction, this role provided unique challenges in dealing with the pandemic to deliver a profitable business offering in a highly competitive market.It also gave me the ability to design a new staff recruitment and training strategy which negated the national worker shortage.

A highly challenging role overseeing day-to-day operations. A mix of short term and permanent lodgers as well as the local student alumni from Sydney University, allowed for a busy daily trade with regular events and meetings. I had recently began my employment when the pandemic began in March 2020. I implemented a comprehensive response plan however after a prolonged mandated shutdown I decided to relocate my family away from the city.

Fast paced QSR with a highly visible social media presence. This business had a focus on delivering unique products across all locations with consistency. Revenue projections and delivery were key to my success i this role.

The Laundy Group is one of NSW’s biggest hotel operators, with the Woolloomooloo Bay Hotel being one of the largest and most popular venues with a very diverse patronage. Reporting to the Venue and Regional Manager, I was responsible for the recruitment, training and management of 20 staff members. In this role I advanced my skills and knowledge around a variety of financial reporting systems and processes, including the tracking and monitoring of daily and weekly revenue balance sheets, focusing on the timely identification and resolution of anomalies. I also vastly increased my knowledge and technical skills in the management of Aristocrat and IGT gaming machines, Quickpay ATM and CRT hardware, TAB terminals, Global Eye and CCU software.

As Venue Manager at the immensely popular Hugo’s Lounge, I reported to the General Manager and the Managing Directors and was myself responsible for the recruitment, training and management of a staff of 50, although this number could double during large events. Being a venue frequented by A-listers and celebrities, it was my responsibility to ensure interactions with VIP level clientele was seamless and service impeccable. I also regularly collaborated on the planning and management of ticketed entertainment and large-scale functions both on and off site. Additionally, due to recurring interactions with Diegeo World Class contributors, trainers and International Brand Ambassadors for companies such as Pernod Ricard, Bacardi, Absolut, Moet & Hennessey, I was able to finetune my liquor knowledge and beverage presentation to the highest levels. It was also during this time I was selected by Jose Cuervo Co. to be part of a small study group touring Mexico’s Tequila history and culture; as well as winner of the 2009 Jose Cuervo Best National Bartender in Australia competition.
